after the triumph of 'vanilla pudding', I have made a sequel:
Crème brûlée! And I got it right! From the first time !!!
Maybe I'm not so worthless in the kitchen after all.

As I sit here, wearing an apron (yes, I wear a fucking apron to cook - working in a restaurant makes you do things like that), waiting for my Cuban blackbean soup to cook through.... What's for dinner?

Also, apparently today is National Margarita Day. Ole!

Lasagna & salad, here. Etoile, do you cook professionally? Love to cook and bake. And eat. ;)

In the morning, coffee, puff pastry, and a croissant. For lunch, potato wedges. For an afternoon snack, chocolate cake with cranberry jelly. For dinner, steamed cabbage. The puff pastry was a dud because it didn't have enough butter.

I was a sous-chef at a vegetarian restaurant for a couple of months. I was a real keener when I took vegetarian classes and my teacher asked me to help her open her restaurant. I took my vacation to help her open and then worked every weekend for a few months. I have a good routine when I get back in the kitchen. Sadly, my daytime job has kept me out of the kitchen for 4 years, and cooking has become a sporadic thing again. Part of my retirement plan involves food - but not the crazy cutthroat business of a restaurant. Thinking more of a retreat by the sea where food heals you. (not in the esotheric cleansing crap though).

I love food. That's why I have such a nice bedonk ;) I have a feeling, if we lived close to each other that it could be dangerous! ;) In a good way, of course!

Steamed cabbage? I miss that so much. My parents would make it regularly. Were they stuffed? Or was it just steamed?

Hey guys, i knew we had a cooking/recipes thread here somewhere as i was actually planning on starting one up myself but remembered there was a discussion and hadn't gotten around to it. thanks, Etoile, I am in the kitchen all the time now and eager to share my new found love for cooking! I hadn't a clue i'd actually be good at it, but there might be some natural inherited abilities as my mother's side are all amazing. I grew up in Texas and raised by cajuns so i have a pretty spicy style~
I roasted a chicken for mod1 a while back, it was a lemon/garlic stuffed thing and something i just had to experience. It turned out exceptionally well for my first time! He tore that thing up.
I seem to be especially gifted in the cajun department... my favorite dish is shrimp creole, used to eat that every sunday after church.. with jalepeno cornbread and hushpuppies.

I haven't tackled baking so much but plan to...
I'll be popping in here for suggestions and probably asking some pretty dumb questions as i'm so new to this though i do watch the foodnetwork sometimes all day. Oh i also made a homemade chicken noodle soup that my daughter claims to be the best she's ever had. I just enjoy making it as i am finding its wonderfully relaxing for me..
I need an apron, that will be one of the many things i invest in as I actually spend more time looking at expensive cookware when shopping. I fantasize about dutch ovens. What happened to me? I used to be the freezer queen! Men suffered who were with me as i wasn't known to go all out in the kitchen... frozen meals anyone?
One downside is i am extremely messy. I hate the clean up! :(

Aprons rock! My favorite is one that my brother gave me which says "Bite Me". It's pretty bad ass when you wield a cleaver.

Cool!!! Food is such a wonderful thing, just the act of prepping food can relax, soothe and become a creative outlet. Food Network is a guilty pleasure of mine. I'll watch you cleave and give the smack down to a piece of meat. I just think while I watch how I could do that using seitan.

Aprons are lots of fun too. I don't actually own any of these but they are part of my list to get. The ones I have actually come from Ikea and a few were gifts.

Making your own stock is probably one of the most gratifying things to do. There's so much flavor you can get from left over vegetables, and pieces of meat. You can change up the flavor by roasting the scraps, or adding in more onions, garlic and spices.

Dutch ovens.. YES! I own a few. They rock. I want the whole Creuset set in cherry.... :D

The aprons are too cute.

The steamed cabbage ended up being soup. Stuffed cabbage are good, too.

I don't like the clean up either. I tend to cook where I only use one pan.

I'm not vegetarian, but one of my favorite would be stir fried eggplants and fried tofu cubes with garlic black bean sauce. Slice up Chinese eggplants and sautee them. Then add fried tofu cubes with some Chinese garlic black bean sauce, a bit of sugar, and a bit of dried chili flakes if you like a bit of spice.

I like baking, too. Still trying to achieve airy and crispy French baguette breads. They're hard to make. A nice toasted baguette sandwich is so good with your choice of filling.

Cleaning up is a bitch but can be less of a pain if you clean as you go. I had to master that while working in a kitchen and waiting tables at the same time. You can't just take an hour to go through the pile so you rinse, wash, and wipe as you go along. I have to say that I love my dish washer.

That recipe sounds delish, sfive! Mind if I feature it on my blog if you give me a bit more details? I'm happy to give you credit for it.

I used to love making bread. It's very time consuming but every once in a while, I'm known to whip up a batch.

Yeah the dutch oven i am finding is a must so its top on my list along with a good set of chef knives and a slow cooker.
